Why Shmurah Matzoh?


The word shmurah translates to “watched” in Hebrew, and describes our matzohs. The grain is carefully watched and protected against any contact with water from the moment of harvest. Water would cause leavening of the grain and thus render it unfit for use on Passover. Rabbinical supervisors are present at the harvesting; cleaning the combine, augers, silos, and any other equipment that the wheat contacts. Non shmurah matzohs are supervised only during the baking process.
